Abstract:	Introduction: Celiac disease (CD) is an immune-mediated, chronic, and systemic, condition triggered by gluten ingestion, for which the only available treatment, essential for maintaining health and preventing long-term complications is the adherence to a gluten-free diet (GFD). Although it plays a central role in symptom remission, nutritional recovery, and particularly in children, adequate growth and development, the rigorous and restrictive nature of the GDF can transform an individual’s relationship with food. In this context, a CD diagnosis reshapes the role of food in daily life, now marked by constant vigilance, social limitations, and dietary restrictions that extend beyond nutritional aspects and may affect food attitudes and behaviors. Objective: To deepen the understanding of eating attitudes and behaviors in children and adolescents with CD by integrating a review of existing methodological approaches with the validation of an instrument adapted to the Brazilian context. Material and Methods: This dissertation comprises two complementary studies. First, a scoping review was performed to map the methodological approaches used to assess eating attitudes and behaviors in children and adolescents with CD. The review followed the Joanna Briggs Institute (JBI) methodology and was reported in accordance with the Preferred Reporting Items for Systematic Reviews and Meta-Analyses extension for Scoping Reviews (PRISMA-ScR) guidelines. Two reviewers independently selected the studies and extracted the data, with disagreements resolved by consensus or by a third reviewer. Extracted data were analyzed descriptively and organized into tables, flow diagrams, and figures, accompanied by a narrative synthesis aligned with the review objective and research question. Following the identification of a disease-specific instrument to assess eating attitudes and behaviors in children and adolescents with CD, the Child Coeliac Disease Food Attitudes and Behaviours Scale (Child CD-FAB) was translated, cross-culturally adapted, and psychometrically validated. This rigorous process included forward translation, consensus synthesis, back-translation, validation of the back-translation by the author of the original questionnaire, pre-testing, and test–retest procedures, with analyses of reproducibility and internal consistency, using the Intraclass Correlation Coefficient and Cronbach’s alpha (α), respectively. Results: The scoping review showed that most studies employ qualitative methods or combine different tools to explore eating attitudes and behaviors in pediatric CD. A scarcity of specific instruments developed for this purpose was observed, indicating relevant methodological limitations in the field, consistent with weaknesses previously described in the literature. The review identified a single instrument specifically designed to assess eating attitudes and behaviors in children and adolescents with CD. The translation and cross-cultural adaptation of the Child CD FAB resulted in an equivalent Brazilian Portuguese version (Child CD-FAB-BR), with no modifications required according to the author of the original instrument, and the pre test (n = 5) indicated adequate item clarity. Psychometric analysis demonstrated good internal consistency (α = 0.892) and excellent test–retest reliability (ICC = 0.923).Conclusion: The Child CD-FAB-BR is the first available instrument to assess eating attitudes and behaviors in Brazilian children and adolescents with CD. Its availability will contribute to future research and clinical practice, guiding behavior-based strategies to improve nutrition education and to inform public policies aimed at this population.
