| Abstract: | Brazil is one of the top three biggest producers of beer in the world, with a production of over 14.5 million liters; however, malt production is insufficient to supply the national demand, with 60% of this demand being filled in by imported products. Beer production is a great consumer of water and it generates organic sub products and effluents containing chemical products used in cleaning the equipment, thus presenting an immense challenge to the sustainability of the beer industry. The following work is about a fluidized bed reactor with adaptations to malt production, aiming to match the demand for national malt production. The reactor is described in two parts and its respective operating mode. A CCDR methodology (Central Composite Rotational Design) has been developed to validate the functioning of each step of the malting process using the reactor. The second part of the work is about a treatment of brewery spent grain (BSG) from beer production with the alkaline effluent used in cleaning the equipment in the process of beer production, which goal is to contribute with knowledge towards the treatment of residue and effluents, mainly in microbreweries. In an alkaline environment, the lignin present in the BSG reacts with an acid, neutralizing the pH of the alkaline effluent. To understand the chemical reactions which take place in the mixture of the residue and the effluent, analysis of the lignin and holocellulose rates were conducted in the BSG before and after the reaction. Every BSG sample which has been through treatment with the alkaline effluent has presented a reduction in the amount of soluble and total lignin, this reduction reaching 18%. Analyses of the FRX and EDX have also been conducted in the ashes of the control and treated samples. The samples have presented a reduction in the amount of silicon and an increase in calcium and magnesium in relation to the untreated BSG. The fluidized bed reactor has proven to be a viable technology in malt production, once it allows the homogenization of the grain bed, accelerating the process and presenting a product with homogenous characteristics. In its turn, the treatment of the alkaline effluent with BSG has proven efficient, allowing for a neutral pH of the effluent using the residue of the brewery itself. |
