Abstract: The viticulture of Serra Gaúcha has a strong connection with the arrival of Italian immigrants to the region. The transformation of the natural landscape and the creation of a cultural landscape is one of the legacies of these Italian immigrants, called Italian settlers, to the Serra Gaúcha region. In this way, the study aimed to understand the relationship of this settler with his new territory, investigating the migratory process, its adaptation to Serra Gaúcha, the beginning of vitiviniculture in the region, the construction process of the terroir of Serra Gaúcha and the relevance of vitiviniculture for the development of the region. As a hypothesis, the study assumes that among the variables that make up the concept of terroir, the knowledge (know-how) acquired over the centuries in wine production by Italian immigrants, together with the culture of wine interspersed in their daily activities, and the characteristics of the natural landscape, were the main variables that contributed to the regional development process. As a general objective, the thesis proposes to analyze how the natural landscape and the territory, together with the culture of Italian immigrants from wine production, contribute to the regional development process of Serra Gaúcha. As a basis for this proposition, the study used the Rapid Rural Appraisal (RRA) methodology, focusing on the opinion of experts in the national wine sector, as well as on documentary research and on a bibliographic reference that encompasses concepts of geography, economics and the contextualization of the wine production chain. It should be noted that this methodological approach was chosen due to the coronavirus pandemic, which is plaguing the world. As main results, mainly with regard to the concept of terroir of Serra Gaúcha and the variables that compose the concept, it was verified that the wine culture interspersed in the culture of the Italian immigrant was important in the process of development of the vitiviniculture of the region, but the apprenticeship (knowing how to do), mainly because it is a very different viticulture from that which they had and had access to in Italy, was developed in Brazilian territory. The knowledge, for the most part, was built in Brazilian territory, both because of the need to learn the productive management technique in a new type of territory, as well as because of the varieties of vines that built the base of this knowledge, the American grapes, which until then they were not part of the Italian immigrant's life context. Regarding the regional development provided by the viticulture of Serra Gaúcha, it was observed in the interviewees' statements, as well as in the references collected, the convergence towards a single note, that there was an improvement in the quality of life of the inhabitants of the Serra Gaúcha Region. This improvement can be understood by the increase in income in the region, decrease in the mortality rate, high life expectancy, quality education and maintenance of students in schools, as well as a slightly less unequal income distribution, even more compared to the rest of Brazil. These improvements, together with the creation of Geographical Indications (IGs), wine tourism, the strengthening of support institutions, the history of overcoming Italian immigrants, vitiviniculture and all its cultural aspect, regional development is more noticeable.
