Abstract: With the increasing growth in water demand, water stress scenarios have become more frequent, such as the one experienced by the Federal District between 2016 and 2018. Therefore, it is important that measures are taken to reduce water consumption in buildings. For this, it is necessary to understand how water is being used in different types of buildings. The commercial ones do not have as high consumption as the residential ones, in which there are a series of studies about it, and also very little was discussed about the use and conservation of water in commerce. In a previous study on commercial buildings, it was identified that restaurants have a high standard of consumption. With this in mind, this work aimed to characterize the end uses of water in an à la carte restaurant. To achieve this goal, as a starting point, an establishment was selected due to its availability for research. Then, a field survey was carried out through interviews with key users, survey of consumption and consumer agents, hydraulic survey and survey of water uses (direct measurement and estimation). The data obtained from this survey were tabulated, treated and analyzed. As a result, for the measured appliances, it was identified that the main consuming agent was the kitchen sink for washing utensils (315.35 liters per day) and that the time with the highest volumes was from 3:01 pm to 4:00 pm. In turn, for both measured and estimated appliances, the ones with the highest consumption were the sink with 1,525.53 l / d and the toilet bowl with 929.46 l / d, corresponding to 41% and 25%, respectively. total measured.
